Ingredients

  • 1 medium size U.S. Russet Potato
  • 30 grams feta cheese
  • 2 teaspoons olive oil
  • ¼ cup fresh basil leaves (chopped)
  • ¼ cup cherry tomatoes (diced)
  • Salt and crushed black pepper to taste

Preparation

  1. Scrub one medium potato and poke it 6 times with a fork.
  2. Place potato directly onto the microwave plate and microwave for 5 to 6 minutes. (The time depends on the number of potatoes and the size of your potatoes.)
  3. To check if the potato is done, gently squeeze the sides of the potato. If it gives without resistance and starts to open up, it’s ready. If it still seems a bit firm, microwave for another minute at a time until tender.
  4. Carefully cut open your potato and fluff up the flesh of the potato with a fork.
  5. Top with feta cheese, olive oil, fresh chopped basil leaves and chopped cherry tomatoes. Season with salt and pepper to taste.

Tip:

  • For 2 medium-sized potatoes, start with 10-11 minutes of microwave time.
  • If you have 4 potatoes, start with 15-16 minutes. For just 1 potato, start with 5-6 minutes.
  • If your potatoes are different sizes, remove the ones that are tender and continue cooking only the ones that need additional time.
  • Topping ideas include: butter, sour cream or Greek yogurt, shredded cheddar cheese, crumbled blue cheese or feta or goat cheese, beef/chicken bacon bits, chives or fresh herbs, avocado.
