Ingredients
U.S. Potato Ikan Sate
100g U.S. Dehydrated Potato Granules
250g Mackerel Fish, minced
5g Salt
200ml Water
125g Rice Flour
500g All-purpose flour
80g Shallots, finely chopped
1 Egg, beaten
Bamboo or metal skewers
Cooking oil for frying
Sweet Potatoes Sauce
50g U.S. Dehydrated Potato Granules
75g Sweet potatoes, peeled and cubed
3pcs Dried chillies, seeded
1pc Red chilli, seeded
40g Galangal, chopped
15g Tamarind pulp, rubbed with 250ml water
30g Sugar (to adjust the tamarind’s sour and spice)
15g Light soy sauce
30g Plum sauce
To taste with Salt

Methods to Prepare U.S. Potato Ikan Sate
Mix the mackerel fish meat and salt thoroughly. Add in the U.S. Dehydrated Potato Granules.
Pour water into the dough little by little at a time while kneading until the texture is even. Add the rice flour gradually while kneading until the texture is smooth. Add the chopped shallots and stir well.
Take 1 spoonful of the dough, dip it in egg and roll in flour. Repeat procedure until the dough is used up. Fry the dough pieces in oil until it turns golden brown. Remove and drain.
Pierce the fried U.S. Potato Ikan Sate pieces with skewers and serve with the Sweet Potato Souce.
Methods to Prepare Sweet Potatoes Sauce
Strain the tamarind juice and combine everything except salt and sugar.
Bring to a boil then lower heat to simmer for 30 minutes.
When the sweet potatoes are cooked, blend everything together, add in the U.S. Dehydrated Potato Granules and mix well.Adjust to taste with salt, sugar and reduce to the preferred sauce consistency.
