Tzatziki

  • 1 medium yellow potato (5.3oz), peeled, boiled (Can use Russets, Reds, or rehydrated dehy, if preferred)
  • 1 1/2 tablespoon shallot, finely diced (22g)
  • ½ cup Extra Virgin Olive Oil (118mL)
  • 1 tablespoon lemon juice (17g)
  • ½ teaspoon salt (3g)
  • 1 garlic clove, minced
  • ½ of a whole English cucumber, diced, skin on
  • ¼ cup fresh dill, chopped (2oz)
  • ¼ cup mint, chopped (2oz)
  • 1 ½ cup dairy-free yogurt (12oz)
  • Pinch of white pepper (1oz)
  • ¼ cup cold water (2oz)

Preparation

  1. Skin the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before mashing.
  2. In a large bowl, roughly mash the potatoes until they are broken into small pieces and not thoroughly mashed.
  3. Fold in all other ingredients.
  4. Serve with a gyro, pita bread, or a food of your choice!
