Description

Borneo Style U.S. Potato Salad with wild onion, ginger flower, silver fried anchovies, and tossed with lime chilli dressing.

Ingredients

  • 5 Medium size U.S. fresh Russet Potatoes
  • 50gm local wild onion
  • 50gm red onion
  • 50gm local ginger flower
  • 10gm Chilli red
  • 1 tbsp chopped coriander leaves
  • 50gm fried silver anchovies
  • 3 pcs fresh lime.
  • 2 tbsp Sambal Belacan
  • Salt and pepper for Seasoning

Preparation

  1. Peel and wash the U.S. Russet potatoes. Cut into medium size cubes. Prepare a boiling water inside the medium size pot. Cook the U.S. Russet potato cubes for 10-12 minutes. Using a strainer, transfer the cooked U.S. potato cubes into a mixing bowl.
  2. Inside the mixing bowl add the local wild onion, red onion, sliced local ginger flower, chopped coriander, red chili, and fried silver anchovies.
  3. Add the lime juice, sambal Belacan and seasoning inside the premix potato salad.Mix all the ingredients and transfer it into the salad plate.
