Ingredients

  • 200g - Fresh U.S. Purple Potatoes
  • 100g - Cooked Puff Pastry (Crumbled)
  • 30g - Raisin
  • 30g - Pistachio (Roughly chopped)
  • 30g - Dried Coconut Flakes (Toasted)
  • 200g - Whipped Cream
  • 500ml - Full Cream Milk
  • 180g - Sugar
  • 2 nos - Cardamom Pods (Crushed)

Preparation

  1. Quick pre-cook the fresh U.S. purple potatoes in boiling water, diced it after it cooked and set aside.
  2. Bring to boil milk, sugar and cardamom pods. Once boiled turn of the heat and let the cardamom pods flavor infused for at least 15 minutes. Once done, strain the milk and set aside.
  3. Place cooked puff pastry in the dish followed by purple potato, raisin, pistachio and coconut flakes.
  4. Pour the infused milk into the dish and let the puff soaked for couple of minutes.
  5. Pour whipped cream on top of the dish.
  6. Finish in the oven at 300 °C for 3 minutes until golden brown. Ready to serve.
