Ingredients

  • 500g - Fresh U.S. Red Potatoes
  • 200g - Chicken Breast (Trimmed and diced)
  • 50ml - Whipping Cream
  • 1 nos - Egg
  • 3g - Fresh Thyme (Chopped)
  • 3g - Fresh Tarragon (Chopped)
  • Salt and White Pepper to taste
  • As needed - Cooking Oil for frying
  • As needed - All-Purpose Flour
  • As needed - Egg Wash
  • As needed - Breadcrumbs

Preparation

  1. Quick pre-cook the fresh U.S. red potatoes in boiling water, sliced it to 1 inch after it cooked and set aside.
  2. In a food processor, place chicken breast, whipping cream, and egg. Blitz until homogenized and season as needed.
  3. Transfer into a mixing bowl and fold the farce with chopped thyme and tarragon. Set aside.
  4. Spread the chicken farce on the U.S. red potato and place another potato on top like a sandwich. Lightly press it and cover the edges of the U.S. red potato evenly with farce. Set aside.
  5. Prepare the breading method by dusting the potato with flour followed by egg wash and bread crumb.
  6. Deep fry the U.S. red potato croquette at 170°C for 4 minutes. Ready to serve.
