Caesar Dressing

  • 1 medium yellow potato (5.3 oz), peeled, boiled (Can use Russets, Reds, or rehydrated dehy, if preferred)
  • 1.5 tablespoon shallots (22 g)
  • ½ C Extra Virgin Olive Oil (118 mL)
  • 4 teaspoon lemon juice (23g)
  • ½ teaspoon salt (3g)
  • 2 anchovy fillets
  • 2 garlic cloves, whole
  • 2 teaspoons Dijon mustard (11g)
  • 3 tablespoons nutritional yeast (51g)
  • ¼ teaspoon black pepper (2g)
  • ½ cup + 2 tablespoons cold water (5oz)

Preparation

  1. Peel the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
  2. In a blender, add the potatoes and all other ingredients. Blend until smooth.
  3. Serve with a Caesar salad or your food of choice!
