Ingredients

Main Ingredients:

  • 1 medium US Potato – skinned and cut into thin cubes
  • 1 green apple – cut into thin matchstick strips
  • 40 grams sliced red onions
  • 80 grams (1/2 cup) cherry tomatoes – quartered
  • 80 grams (1/2 cup) Japanese cucumber – diced
  • 20 grams (1/4 cup) ikan bilis
  • 1 Tablespoon Canola oil
  • ¼ cup chopped coriander leaves & sliced red chili to garnish

Ingredients to be pounded together for the kerabu dressing:

  • 1 cloves garlic
  • 2 cili padi (adjust to your spice level)
  • 2 teaspoons palm sugar
  • 1 Tablespoon Thai fish sauce
  • 2 Tablespoons freshly squeezed calamansi juice

Preparation

  1. Heat 1 Tablespoon of Canola oil in a pan and lightly panfry the US Russet potato till cooked. Remove from pan onto paper towels and set aside
  2. Using the same pan, lightly toast the ikan bilis till crisp. Set aside
  3. Pound all the ingredients for the salad dressing together using a pestle and mortar. Set aside
  4. Gently toss the cooked US Russet potato, the green apple and ikan bilis with the dressing
  5. Top with chopped coriander leaves and serve immediately
