Crispy Japanese Croquettes with U.S. Russet Potatoes & Mince Beef

Description

A golden-brown croquette made with fluffy US Russet potatoes and savory minced beef, seasoned with soy sauce and mirin. Coated in crunchy panko breadcrumbs and deep-fried to perfection, these delicious patties are served with tangy tonkatsu sauce for a comforting taste of Japan.

Ingredients

Potatoes

  • 2 large U.S. Russet potatoes
+

Beef Filling

  • 250g minced beef
  • 1 medium onion, finely chopped
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • 15ml soy sauce
  • 15 ml mirin

Coating

  • 200gm all-purpose flour
  • 2 eggs, beaten
  • 250gm panko breadcrumbs
+

For Frying

  • Vegetable oil for air fryer

Preparation

Prepare the Potatoes:

  1. Peel the U.S. Russet potatoes and cut them into chunks.
  2. Boil the U.S. Russey potatoes in salted water until they are tender, about 15-20 minutes.
  3. Drain the water and mash the boiled U.S. Russet potatoes until smooth. Set aside to cool slightly.

Prepare the Beef Filling:

  1. Heat 1 tablespoon of vegetable oil in a pan over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Add the minced beef to the pan and cook until browned.
  4. Season with salt, pepper, soy sauce, and mirin. Cook for another 2-3 minutes until the flavours meld together.
  5. Remove from heat and let the mixture cool slightly.

Combine and Shape:

  1. In a large bowl, combine the mashed U.S. potatoes with the beef mixture. Mix well until evenly combined.
  2. Take a portion of the mixture and shape it into oval patties, about the size of your palm. Repeat until all the mixture is used.

Coat the Croquettes:

  1. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs.
  2. Dredge each patty in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs. Ensure each patty is well-coated.

Fry the Croquettes:

  1. Heat air Fryer to 180°C.
  2. Place the croquettes into the air fryer & sprinkle some oil
  3. Fry until golden brown and crispy, about 3-4 minutes per side.
  4. Remove the croquettes and drain on paper towels to remove excess oil.

Serve:
• Serve the croquettes hot your favourite dipping sauce.
