- 1 yellow potato, peeled, boiled (5.3oz)
- 1.5 tablespoons shallot, finely diced (22g)
- ½ cup Extra Virgin Olive Oil (118mL)
- 1 tablespoon lemon juice (17g)
- ½ teaspoon salt (3g)
- 3 teaspoon dill, dried or fresh (18g)
- 1 garlic clove
- ½ teaspoon onion powder (3g)
- Pinch of white pepper (1g)
- ½ cup plant-based cream cheese, dairy-containing cream cheese, or buttermilk (4oz)
- 1 tablespoon fresh chives (17g)
- 2 tablespoon fresh parsley (34g)
- 1 teaspoon tarragon (6g)
- ½ medium-sized avocado
- ½ medium-sized avocado
- ¼ C water (2oz) or As Needed
Preparation
- Skin the potatoes and cut them into uniform pieces. Boil the potatoes until they are fork-tender. Allow the potatoes to cool before blending.
- In a blender, add the potatoes and all other ingredients. Blend until smooth.
