Loaded deep fried Curly fries with topped with Mapo baked cheese and pickled red ginger

Ingredients

  • 500gm U.S. Frozen Curly Fries
  • 50gm Sichuan Peppercorn
  • 5gm Fermented bean paste
  • 5gm Chili Oil
  • 5gm Haloumi cheese
  • 10gm Spring Onion (Chopped)

Pickled Red Ginger

  • 100gm Ginger fresh (Peeled and thinly slice)
  • 50ml White vinegar
  • 20gm Sugar
  • 1gm Red Coloring (Optional)

Preparation

  1. Prepare a medium size bowl. Add the slice ginger, white vinegar, sugar and the red coloring. Let the mixture marinate and pickle for 30-45 minutes.
  2. Preheat the oven to 356°F (180°C). Bake the U.S. curly fries and slice haloumi cheese for 10 minutes. Remove the cooked U.S. curly fries and cheese from the oven and transfer into a medium size mixing bowl.
  3. Preheat a medium size nonstick pan. Add the chili oil and sauté the sichuan peppercorn. Last but not least, add the fermented bean paste and mix all the ingredients together. Set aside once it’s cooked.
  4. Pour the cooked Mapo sauce inside the mixing bowl with the cooked U.S. curly fries and cheese and toss them.  Ensure all the sauce, U.S. curly fries and cheese are properly mixed.
  5. Transfer into a serving bowl for serving. Sprinkle with spring onion and serve with the pickled ginger.
