What’s for tea break? A quick simple snack prawn fritters with crinkle cut fries is perfect as a snack or appetiser. It is very aromatic, can be served either on its own or with some chillies sauce. Freshly deep fried and all crispy and hot from the edges.
Ingredients
250g U.S. Crinkle Cut Fries
500g Self-Rising Flour
1 Egg
6g Yeast immediately - Mixed with 1 tsp sugar and 125ml warm water
250g Water
5g Salt
A pinch of Turmeric Powder
100g Onions, sliced
200g Bean Sprouts - washed and squeeze slightly
20pcs Prawns, washed & then wipe dry with kitchen tissue
10 stalks Chives – cut to small pieces
1pc Red Chilies – sliced thinly
Cooking Oil for frying
Saucing - Chili Sauce
100g Red Chilies, de-seeded
25g Garlic
100ml Water
25ml White Vinegar
50g Sugar
5g Salt

Preparing U.S Crinkle Cut Fries & Prawn
Mix yeast with warm water and sugar. Boil it until it bubbles.
In a large bowl, add flour, turmeric powder, salt and mix well.
Add the egg and water to the yeast. Mix well.
Add in the vegetables (bean sprouts, red chili and chives). Allow the batter to sit for awhile until the mixture turns foamy.
Heat oil in a pan over medium heat. Once the oil is heated, place a flat stainless-steel ladle into the oil for 3 minutes.
Scoop some batter onto the stainless-steel ladle, place a prawn and some U.S. Crinkle Cut Fries on top. Fry for about 30 seconds before using a spoon to gently dislodge the fritter off the ladle.
Fry both sides of the fritters until golden brown. Serve with chili sauce.
Preparing Chili Sauce
Add all the ingredients into a blender and blend well.
In a small pot, bring blended mixture to boil and simmer on low heat until the chilli sauce thickens.
