U.S. Mashed Potato Crab Cakes

Ingredients

Loaded mashed crabcake

  • 4 nos U.S. Russet Potatoes (Cut into cubes)
  • 100gm Crabmeat fresh
  • 20gm Carrot (Small dice)
  • 20gm Onion white (Small dice)
  • 5gm Coriander fresh (Chopped)
  • ¾ tsp Salt
  • ¾ tsp Black Pepper

Lime Cumin Aioli

  • 5ml Lime juice
  • 10gm cumin powder
  • 200gm Mayonnaise

For Breading Potato

  • 3nos Egg (Egg wash)
  • 200g Japanese bread crumb

Preparation

  1. Prepare a small mixing bowl. Add the lime juice, cumin powder and mayonnaise
  2. Prepare a medium size pot fill with water. Add the U.S. Potatoes that has been cut into cubes and cook for 20 minutes.Once the potato cubes are cooked, use a strainer to removed excess water and transfer inside mixing bowl. Use a potato masher to mash the potatoes. Add the rest of the ingredients inside the mashed potatoes (Crab meat, coriander chopped, celery, carrot, onion.). Shape the mashed potatoes into a round shape.
  3. Prepare the 3 medium size tray. (Flour, egg wash and bread crumbs). Start to coat the U.S. potato crab cakes now with flour first, next egg wash and lastly the breadcrumbs. Do this for at least 6 nos. Pre heat oven at 180 Celsius, cooking time 15 minutes. Arrange the breaded U.S. potato crab cakes on the baking tray and put inside the oven.Start the cooking process now.
  4. Once the U.S. potato crab cakes are cooked , transfer them to the serving plate and serve together with the lime cumin aioli.
