Description

Ingredients

Side Dish & Main

  • 200g U.S. Russet Potatoes, shredded
  • 50g Green Papaya, shredded
  • 150g Shallots - peeled and sliced lengthwise
  • 1 Ginger Flower, finely sliced
  • 2 tbsp Grated Coconut, toasted
  • 180g Beef Tenderloin

Dressing (To combine)

  • 2 tbsp Sambal Belacan
  • 3 tbsp Calamansi Lime Juice
  • 2 tbsp Sugar
  • To taste Salt

Preparation

  1. Peel the green papaya & remove the skin of U.S. Russet Potatoes. Use a shredder peeler & shred them. Soak the green papaya in ice water and set aside.
  2. Refresh the shredded U.S. Russet Potatoes with water & strain it dry. Bring water to boil, blanch the shredded potatoes for 3 mins then soak them in cold water. Drain the green papaya & U.S. Russet Potatoes to dry.
  3. Combine all the ingredients in a mixing bowl. Add in the dressing and toss well. Adjust seasoning to taste.
  4. Season the beef tenderloin with salt and pepper. Sear the beef until medium done. Slice the beef and serve with the U.S. Potatoes Kerabu.
