U.S. Waffle Fries with Chicken Nachos

Serves 1 portion


  • 150gm U.S. Waffle Fries
  • 300ml Cooking Oil

Chicken Curry filling (Ingredients A)

  • 80gm Minced Chicken (seared)
  • 20gm Onion Chopped
  • 10gm Garlic Chopped
  • 50gm Curry Powder
  • 1gm Curry Leaf
  • 2gm Chili powder
  • 2gm Turmeric Powder
  • 20ml Yogurt Plain
  • 20ml Cooking Cream
  • 20gm Coriander leaves (Chopped)
  • Salt for Taste
  • 10ml water
  • 150gm Mozzarella cheese (shredded)
  • 1no Lime (For garnish)

Dabu Dabu Salsa (Ingredients B)

  • 2nos Fresh red chili (cube)
  • 50gm Tomatoes (removed seed and cut cube)
  • 50gm Onion (cube)
  • 5ml lime juice
  • 5gm Italian parsley (chopped)
  • 50gm cucumber (cube)
  • 3nos chili padi (slice)
  • 10gm coriander leaves (chopped)
  • Salt for taste
  • Sugar for taste


  1. In a hot pan, heat the cooking oil and deep fry the U.S. waffle fries till crispy and golden brown.Pour them into a bowl and set side.
  2. In the other pan, heat the cooking oil and pan sear the minced chicken meat before setting aside in a bowl.
  3. Sauté the onion and garlic before adding the curry leaf. Then add the curry powder together with chili powder and turmeric powder.  Add a bit of water to help avoid burning the mixture. Then add in the minced chicken that had been seared earlier.
  4. Add the yogurt, followed by the cooking cream. Let it become a thick sauce, season it with salt.
  5. Finish it with chopped coriander.
  6. For dabu dabu salsa, mix all the ingredients B in the bowl and cool it in the fridge for 20minutes.
  7. Now pour the chicken filling on the top of the U.S. waffles fries.
  8. Sprinkle the dabu dabu on top and sprinkle the cheese too.
