Coconut U.S. Potato Croquettes

Coconut Potato Croquette

  • 4 nos U.S Russet Potatoes (Cut into cubes)
  • 50gm Unsalted Butter (Melted)
  • 20gm Capsicum Yellow (Small dice)
  • 20gm Capsicum green (Small dice)
  • 20gm Onion white (Small dice)
  • 50gm 3 Cheese (Cheddar,mozzarella,Gouda)
  • ¾ tsp Salt
  • ¾ tsp Black Pepper

Sour Plum Mayonnaise

  • 5gm Coriander Chopped
  • 10gm Sour Plum powder
  • 200gm Mayonnaise

For Breading Potato

  • 3nos Egg ( Egg wash)
  • 200gm All Purpose Flour
  • 200g Japanese bread crumb
  • 50gm Desicatted Coconut


  1. Prepare a small mixing bowl. Add the sour plum powder, chopped coriander and mayonnaise
  2. Prepare a medium size pot fill with water. Add the U.S. potato cubes and cook for 20 minutes. Once the U.S. potato cubes are cooked, use a strainer to removed excess water and transfer inside mixing bowl. Use a potato masher to mash the potato cubes. Add the rest of the ingredients with the mashed potato and mix well. Shape the U.S. potato croquettes into a round shape (40gm each)
  3. Prepare the 3 medium size tray.(Flour, egg wash, mixture of bread crumbs and the desicatted coconut). Start to coat the U.S. potato croquettes with flour first, next egg wash and lastly the mixture of dessicate coconut and breadcrumbs. Do this for at least 6-8 nos. Pre heat air fryer at 180 Celsius, cooking time 15 minutes .Once the air fryer is ready, transfer the U.S. potato croquettes inside the air fryer. Start the cooking process
  4. Once the U.S. potato croquettes are cooked , transfer it at the serving plate together with the Sour Plum Mayonaise.
