Description

A delicious appetiser that is crispy on the outside and soft and fluffy inside.

Ingredients

  • 2 medium U.S. potato, peeled and cubed
  • 8 medium prawns, peeled (leave the tail on) and deveined
  • 2 eggs
  • ½ cup almond flakes
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • 1 teaspoon black pepper
  • 1 tablespoon Chinese cooking wine

Preparation

  1. Boil U.S. potatoes for 10 minutes until fork tender.
  2. In a large bowl, mash with a fork and season with 1 teaspoon black pepper and ½ teaspoon salt.
  3. Marinate the prawns with ½ teaspoon salt, white pepper and Chinese cooking wine for 5 minutes.
  4. Blanch the prawns in boiling water for 1 minute.
  5. Take about 2 tablespoons of mashed potato form into a ball shape, flatten it by gently pressing between palms, place a prawn in the center and cover the prawn well with the mashed potato, then form into a ball.
  6. Beat the eggs in a bowl, dip the ball into the egg wash and then coat it evenly with almond flakes.
  7. Spray some oil on the air fryer’s basket and place the balls in the basket in a single layer.
  8. Air fry for 15 minutes at 180 degrees Celsius until golden brown.
  9. Serve while still hot
